Focaccia (foh-KAH-chee-ah) is a wonderful, versatile flat bread from the Tuscany region of Italy. This is the best in traditional focaccialight and airy with an open crumb and crisp, clean crust. Weve added a little potato flour to keep the bread fresh and moist and to add a bit of sourdough-like favor.
This focaccia comes with a rosemary topping. Serve it as a snack or appetizer with spaghetti sauce or olive oil, as an accompaniment to your favorite meal, or dress it up like a pizza for a main dish. Split and filled with favorite meat and cheeses, this makes a great picnic sandwich.
Its easy to makeour illustrated instructions show you how. Mix the dough ahead and place it in the refrigerator for up to three days. (Aging the dough overnight in the refrigerator allows both the flavor and texture to develop fully.) If you like, you can bake it right away--without refrigeration--and it will still be a great bread.
Each mix has an herb packet. (Olive oil not included. Vegetable oil may be substituted.) Each package contains two mixes and each mix makes an 8 1/2 x 13-inch bread.
